ReplyDeleteI hope that all my family and friends like fudge - because I have 25 pans of it on my counter! The recipe is very forgiving (I only put half the marshmallow in one batch...), and the online recipies all vary slightly, so rather than a link, here is my version. (A digital scale and a stock pot make quadruple batches possible, and disposable foil pans are your friend - less cutting)

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
1 12-oz. (340 g) package semi-sweet chocolate chips
1 7-oz. (198 g) jar Kraft Marshmallow creme
1 cup chopped nuts
1 teaspoon vanilla extract
to make: heat the evap. milk, butter, and sugar to a boil - stir often. Boil for 5 minutes, then take it off the heat. Stir in chocolate and marshmallow until smooth. Add flavouring and nuts if desired . Pour into cake pan or foil lined cookie sheet and leave to cool.

ReplyDeleteMy favorite holiday treat to make is my dad's famous caramels. He and his father worked on the recipe for years (decades?). I usually end up helping by getting water for hard-ball/soft-ball testing or taste testing. I have yet to master the "perfected" recipe. I also help by wrapping them to give away. There is no written version of it as yet. I'm spoiled for any other caramels.

Best side dish ever: Small jar or mayo. Large jar of marinated artichoke hearts. Tub of grated parmesan cheese. Mix it all together and bake it at 375 for 30 min. Serve with bread for dipping. Super yummy!

I love all christmas cookies so I guess I would have to say my favorite for this time of year is rum balls. When we were kids at my grandma's my cousins and I would eat a lot of them and think we were drunk. As an adult I see how much rum is in them and it is such a joke. Thanks for the great giveaway. ReplyDeleteThese are a bit time consuming though because you actually have to shape the dough around the mints (they are pretty though). But if you want a quick cookie, make up the dough and then stir in the andes mints pieces that you can buy in a bag (just like chocolate chips). Tastes the same! Be sure to use that dough though, it's saltier than most cookie doughs and is yummy with the mints.

My favourite Christmas treat is my Late grandmothers secret family recipe Frozen Christmas pudding. It is a closely guarded secret recipe that can only be given to family members who can be trusted to only ever make it in December. It is so special.

i do mine on the stove, but otherwise, that's how you make them. if you make a half batch and put them in a loaf pan, it's the perfect size for just a few people, without making yourself sick eating the whole pan...
i've never heard anyone in the states talk about them, and they totally seem to be a prairie thing here. when i was a kid, every shower, social or other event had plates of "dainties", and these were always there. i craved them for years until i realized how easy they were to make.
Lebkuchen - it's a soft and spicy german cookie. I grew up with them and they are super yummy.

Nothing beats my Mom's shortbread cookies. Just Mom's, though. I've found nothing else to compare. I've even tried making them myself and they're not at all the same. You'll just have to believe me and come by during the holidays for some nog and shortbread ... if you're anywhere near Saskatoon, Saskatchewan for the holidays.
